In 2007 a new employee joined the team at Bircham Windmill, a lady by the name of Mel Butters.  We are very lucky to have her.  Not only is she very good at her job, but she brought with her a very old recipe for bread pudding.  The recipe is one which has been handed down through her family and is a clear winner with all of us and an instant hit with our customers.  Often there are people waiting for Mel’s bread pudding to come out of the oven as we have sold out! 

It is a very good way of utilising left over bread and can be eaten hot or cold, either as a treat with a cup of tea, or as a pudding with cream or custard.  We sell it in our tearooms to eat in, and in the bakery to take away.

To make Mel’s bread pudding, break one loaf of bread up into a bowl and soak it in some water, draining any excess from the bread.

Add 6 oz of fruit, 6oz flora, 4oz brown sugar, 1tsp mixed spice and 1 egg. Mix all together.

Put into a tin approx 9in x 9in

Bake for approx 45  minutes at 400F.
